Apple Walnut Ring Cake


APPLES!



Apple Walnut Ring Cake
From Niagra Calvinette Council Cookbook 1991 
Ingredients:
1 c. butter or margarine                      1 tsp. cinnamon
2 c. sugar                                         1/4 tsp. mace
3 eggs                                             2 tsp. vanilla
3 c. sifted flour                                 2 c. chopped nuts  
1-1/2 tsp. baking soda                       3 c. chopped apples
1/2 tsp. salt 

Directions:
Cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Mix and sift flour, baking soda, salt, cinnamon and mace. Gradually stir in vanilla, apples and walnuts. Batter will be stiff. Spoon into greased and floured 10 inch tube pan. Bake at 325 degrees for 1-1/2 hours. Let cool in pan for 10 minutes. Remove to rack. Enjoy!






Tastes great on a cool fall day, with a warm cup of coffee or tea and a dolup of whipped cream!

I should have used more apples to make the cake more moist. Other then that everything went smoothly. I served it to my family and they said it tasted great! Everyone enjoyed it. :)

Chocolate Brittle Surprise





Chocolate Brittle Surprise!
Ingredients:
-35 unsalted soda crackers
-1 cup butter
-1 cup packed brown sugar
-2 semi-sweet chocolate chips
-1 cup chopped pecans (optional)
Directions:
1.Pre-heat oven to 350 degrees F (180 degrees C) Cover cookie sheet with foil, spray foil with cooking oil spray.
2.Place Crackers on foil in 5x7 inch rows
3.Microwave butter on high for 2 minutes. Add brown sugar and stir. Microwave on high for 2 more minutes, stirrig every 30 seconds
4.Pour over crackers. Bake 17-20 minutes (should bubble but not burn)
5.Sprinkle chocolate chips over hot crackers, spread after 2 minutes (chips have softened) sprinkle nuts on top.
6.Refrigerate 1 hour, Break into pieces, can be frozen.




Report:
-Instead of microwaving the butter and sugar I melted it in a sausepan, and brought it to the right consistancy to pour over crackers.(be careful not to burn it)
-I also used parchment paper instead of foil.
-It turned out great!

This blog is about the recipes and food I will be preparing for my Grade 10 Food and Nutrition class(HFN20). I will be posting recipes weekly. Along with the recipes I will be posting pictures and helpful hints and (if I make any) mistakes. As part of the assignment I will be serving the food, setting the table, serving, and cleaning up, so I will also post the table layout and what people thought about the food.
